I'm Megan Crane.

I'm a 28 year old mother of two who also happens to be a professional line cook. I've been working in restaurants in one capacity or another for the last twelve years, always in the kitchen. Currently, I cook in the kitchen of one of a very few gourmet restaurants in my hometown. I love to cook, to innovate and create something my family loves from a few simple ingredients. I'm always trying to save money without sacrificing flavor, and I've discovered that it's fairly easy to do.

 

As a working mother, I understand time constraints, especially when I'm trying to get dinner on the table for my family. Working forty hour weeks, with a two year old son and a nearly four year old son, can be exhausting. So I understand the appeal of convenience. Sure, it's easy to open a can, add a box of stuff to some fried meat, throw a plate in the microwave, head to the nearest drive-thru for a bag of MSG and saturated fat. I've done it. But it doesn't taste that great. It contains all sorts of chemicals, preservatives, empty calories. Besides, my kids love to watch me cook, and I personally believe that the little extra time and effort put into a home-cooked meal helps to show how much I love them.

This is a collection of 20 of my recipes. At first glance, it may appear to be an eclectic group. The common thread that ties them together is this: they are all in heavy rotation in my kitchen. Main courses, side dishes, breads and desserts, they're all here, and broken down into easy to follow steps, from making basic stock (no more canned broth), to an incredibly easy recipe for ravioli from scratch, to homemade marshmallows. Nearly all of these recipes can be made by a kitchen novice.

One of my favorites is the recipe for fresh, homemade ricotta . For the cost of a gallon of milk and a length of cheesecloth, you'll have a pound of delicious, fresh cheese that you can use in a multitude of recipes - gnocchi (also included), lasagna, cannoli, manicotti, etc.
